Steel lets you push against other metals, so - for example, if you were to drop a coin on the ground and push against it, since the ground is much larger and heavier than I am, I would get pushed back or into the air.
I think atium is my favorite, though it's the most rare. It allows you to see several moments into the future when you are fighting someone, enough to anticipate your opponent's next move. It isn't as useful if you can't use the other metals to fight against that strike, but...
Even if there aren't other metals you can use, it will still give you something to work with. Knowing what your enemy's action will be can be incredibly valuable!
If they have pewter, you can't necessarily move in time to stop their actions even if you can foresee them, but... In nearly all other situations, it is incredibly useful. I imagine that is why it is the rarest by far.
